These cookies are actually my family's favourite, especially my husband's.
I happen to have a wonderful nephew who is gluten intolerant, so it is such a lovely and safe treat for him and I am happy to bake this all the time for him. For you too as well J
But please don't underestimate and associate the term "gluten-free" with bland and average. These cookies are far from those words. They are scrumptious, nutty, chocolatey, and a good source of protein.
Have these ready in your house and slip them in your child's lunch box or your husband's bag. It's always a sweet surprise to find them.
